
The weather is gray, dreary and very wet . In other words, typically autumn weather . What does not fit better then than to cook something that makes you think of summer, sun and heat , Spain. This wonderfully sunny land I crave a lot of right now. Therefore I serve your paella !
There are so many different ways to cook it and what to have in the ingredients. This is my Paella today.
1 chopped yellow onion
2 chopped cloves of garlic
4 servings uncooked rice
1 stock cube
0.5 can of crushed tomatoes
1 chopped red bell pepper
1 large pinch of saffron
1 tsp hot paprika + 1 tsp smoked paprika
0.5 cups of parsley chopped
0.5 tsp cumin
0.25 cup peas
0.5 tsp harissa
300g peeled prawns
Fry the onions soft in oil. Add the garlic at the end and let it get fry one minute . Turn the rice , add the broth , tomatoes, harissa and spices and parsley. Turn on the water so it covers the rice by about 1 cm. Cover the pan and let it get to simmer on low heat . After almost all the water has disappeared , add the peas . Let it continue to cook covered. When all the water is gone , add the prawns and stir. Allow to stand over low heat for a few minutes , so the prawns are cooked through . It goes very fast. Ready to eat.
