Kataif – the golden cookies


This golden cookies from Lebanon, middle east and North africa, Kataif, you can fill with what ever you want to. Yes, I know I posted a recipe with Kataif before here on my blog. But this one is with a different filling. And yes I love this once and when I do them they allways disapper at once.

2 cups flour
1 tsp dry yeast
1 ½ cup water
butter or oil for frying
50 g dates paste
2 tsp orangeflower water
0.5 tsp lemon juice
½ cup sugar
½ cup water
1 tbsp lemon juice
2 tsp rosewater
Dried rose petals

Mix the dough and let it get to stand and rise for an hour. It should be thicker than pancake batter but looser than bread dough.
Meanwhile, make the filling and shape them into small balls.
Grease a pie iron or bliner pan and have it on medium heat. Turn in a little batter and add a little filling on one side. Fold over the other side over the filling. Fry over low-medium heat. When one side is brown, turn. And let the other side also get color. Meanwhile, boil the syrup until it thickens a little.
When the cookies are done, turn over the syrup.
Sprinkle the rose leaves.

        haha Same here. Just baked 2 different fantastic cookies 30 minutes ago… And they will not stay for long for sure… Chocolate, cherry, lemon, pistachios…
