Very simple to bake and have a very good taste. Maybe a little unusual with saffron cakes but it works perfectly.

450 ml flour
50 ml sugar
200g butter
5-6 drops of saffron extract
1 beaten egg
flaked almonds
Working together flour, saffron, butter and sugar into a smooth dough. Put it in the fridge for at least 1 hour. Roll out the dough thinly and cutout cookies. Place them on a baking tray with baking paper on. Brush with whipped egg and sprinkle the almonds over. Bake 175C for about 10 minutes.
