Double breaded Cod is so tasty. Here is a way that I usually do. It´s works probably with most types of fish but cod is one of the easiest fish to find this in the shops.

200 g cod fillets
1 teaspoon salt
1 teaspoon lemon pepper
0.5 tsp cayenne pepper
150 ml parmesan cheese, finely grated
100 ml breadcrumbs
50 oz plain flour
1 egg, beaten
2-3 tablespoons butter for frying
Salted fillets. Mix Parmesan cheese, spices and breadcrumbs. Dip and turn the fish in flour, egg and finally in the cheese and bread crumbs mixture. Brown the butter and fry the fish for 3-4 minutes on each side, to the beautiful golden brown color. Serve immediately

I love cod every possible but have never double-breaded it. This, too, will change. Thanks for sharing your recipe. I can’t wait to give it a try.
