Yesterday I did 2 pieces carrot cake. I always do after this recipe, and it really gets both juicy and perfectly every time. Love both cinnamon and cardamom. Simply a perfect carrot cake. Even maybe the best Carrotcake in the world? 😉

4 eggs
350mdl sugar
150g melted butter
600 ml grated carrots
2 tsp bicarbonate of soda
2 tsp vanilla
2 teaspoons baking powder
1 tsp cinnamon
1 tsp cardamom
400 ml flour
glaze:
200 g Philadelphia cheese
150g unsalted butter
2-300 ml icing sugar
3 tsp vanilla
Melt the butter and allow to cool.
Beat eggs and sugar until fluffy.
Stir in the butter and the flour is well mixed with the dry ingredients. Mix in the grated carros. Grease and sprinkle with crumbs  a roasting pan, pour in the batter. Bake at 175 degrees for about 15-20 minutes, depending on the size of pan you have. Then let the cake cool.
Make the glaze like this:
Mix together all the glaze by hand, while since the mixer and whisk to a smooth cream.
Taste it and add if necessary more vanilla sugar. Spread the cream over the cake. Cut into bite-sized squares.
