Chicken tagine with apricots, mint and almonds are one of my favorite dishes. A cheap simple dish that does not need as much attention.

2 chicken fillets into pieces
1 tsp mint mint
2 teaspoons cumin, ground
1 tsp turmeric
1 teaspoon cinnamon, ground
1 tsp hot paprika
1 pc onion chopped
1 st zucchini, green
1 piece garlic clove
1 can of crushed tomatoes
olive oil, for frying
salt and pepper
50 grams of dried apricots into pieces that have been in water
100 grams of roasted almonds
Mix the chicken with the spices and leave for 3-4 hours. Bryn then the chicken in a skillet with a little oil. Remove the meat. Brown the onions now one and the zucchini until they become soft. Mix now all together in a pot and allow it to stand and simmer about 30 minutes. Of course served with rice.

Lovely. I adore nuts in stews and curries, so with almonds in it this dish is a winner with me!

  2. Yummo, I shall definitely be trying this out. I have made chicken tagine with preserved lemons and this sounds a great variation.
