This is my and my family absolutly favorit salmon dish. I grew up with it and its always gives me a feeling of luxery. Its always right to serve and everyone loves it. This is also a old way, since viking time, to preserve the fish.

400g raw salmon (must have been frozen)
1.5 tablespoon salt
0.75 tbsp sugar
0.5 tsp lemon pepper
grated zest of ½ lime
Mix all ingredients and sprinkle over the salmon. Leave it in a bag in two days and turn it over now and then. Cut into thin slices.

Your gravlax recipes look great! Just wondering, why do you say the fish must have been frozen?
