This dessert I eat all the year. Tast wonderful and really worth doing it. But most of the Swedish people eat this around Christmas time. Here I added more spices, as this is the way I normal do. And its the best also. πŸ˜‰

RICE A LA MALTA

2/3 cup short grain rice (for example Arborio rice)
1 ΒΌ cups water
ΒΌ to Β½ teaspoon salt
3 1/3 cups of milk
1 cinnamon stick
3 cardamom seeds
2 star anise
100ml chopped almonds
a few drops of bitter almonds
100 ml icing sugar
1 teaspoon vanilla
300 ml of whipped cream
Rinse the rice. Put into a pan with water and salt and let boil 5 minutes. Take off heat and set aside 15 minutes so rice absorbs more water.
Put the pan back on stove. Add milk, cinnamon, cardamom and star anise, stirring now and then while porridge is cooking slowly until it has just enough. Add sugar for sweeter taste, almon, bitter almond oil, vanilla and stir gently into the whipped cream. Served with fruit sauce
