Perch is a fish that is so underrated. It is a great useful fish that are both nutritious and lean. 

I fished and ate the lot as a child. Maybe because I’m so smart now? hihi 😉

Perch with Long pepper, mashed potatoes and Hollandaise sauce
2 filleted perch
1 finely grated Long Pepper
salt
mashed potatoes:
5 peeled cooked hot potatoes
salt, pepper
1 finely grated Long Pepper
20g butter
about 70 ml of milk
1 egg
1 batch of homemade hollandaise sauce
Start with the potatoes. Take the hot potatoes into a bowl, add butter, spices, milk and eggs. Whisk to a smooth puree. Spoon the potatoes in a greased ovenproof dish. But leave the form without mush in the middle. Salt and pepper the fish. Where put a fish fillet in a buttered ovenproof dish, turn on a little sauce and add the next fish. Turning a little sauce and a fish. Do this until all the fish is covered with sauce. Place in the oven 225c for about 15 minutes or until golden.
