
Apple and Long Pepper match each other very well. Love the two together and so good now that it’s winter and the snow wines out there.
Apple and Gooseberry pie with Long Pepper
300 ml flour
125 g fridge-cold butter
3 tablespoons ice cold water
Filling:
1 finely grated Long Pepper
2 peeled sliced apples
200 ml of gooseberry
1 teaspoon potato flour
200 +50 ml sugar
Pinch together the flour and butter by hand or mix in food processor to a crumbly mass.
Add the water and mix quickly into a dough. Press the dough into the mold. Prick the bottom with a fork. Let rest about 30 minutes in the fridge. Preheat the oven to 225 º C. Pre-bake pie crust in the center of oven 10 minutes. Place the apples in the pie shell. Mix potato flour, sugar and gooseberries. Add the gooseberries in the middle of the pie. Sprinkle the grated Long pepper over the apples and sweeten ago. In the oven about 30 minutes or until the pie had a nice color.
