Spanish fish and mussels stew – a fantastic cheap gourmé dish


Spanish fish and mussel stew

1 kg mussels
200g cod or other white fish into cubes
1 chopped yellow pepper
1 chopped yellow onion
3 pressed garlic cloves
1 chopped Zucchini
1 chopped tomato
1 fish stock or fund
100 ml of tomato juice
1 pinch saffron
2 tsp smoked paprika
1 tsp hot paprika
1 tablespoon chopped parsley
salt, pepper
Fry the onions soft, add all the ingredients except the fish and mussels. Let it simmer, covered, for about 15-20 minutes. Add any more water. When all the vegetables are soft and pass, you put down the fish. Simmer for about 2 minutes. Add the mussels and cover with lid. Simmer covered for about 10 minutes. Serve with good bread.
