Socca – french pancakes with chickpea flour and spices


Try these pancakes! Million Frenchmen can not be wrong, right? Remember when I ate these in Nice and Monaco. They’re really good. They may look like ordinary pancakes with chickpea flour and spices makes them really good.

Socca – pancakes with chickpea flour and spices
200 ml of chickpea
3-4 tbsp olive oil
0.5 tsp salt
250 ml water
freshly ground black pepper ( I recomend Sawak black pepper)
2 pinches thyme
Whisk it all together until smooth. Allow to stand and swell for about 1 hour. Heat a frying pan and pour in the olive oil. Let it warm up and then turn it down a little batter, so that when you rotate the pan so covered the bottom of the batter. Allow it to take color before turning and letting the next page to color. Repeat until all the batter is out. Fold them into three.

      You must use chickpea flour to get it right as it gives a great tast. 🙂 You find it in oriental/arab shops 🙂
