B´stilla – Chicken pie from Morocco


This dish is often served at weddings and parties.
almond stir
200 grams almonds, blanched , peeled and finely chopped
1 tablespoon oil
0.5 tsp cinnamon
2 tablespoons honey
chicken
0.5 cups of butter, melted
1 pc onion, chopped
2 chicken fillets , diced
0.5 tsp black pepper, ground
0.5 grams of saffron
0.5 tsp hot paprika
1 tsp cinnamon
1 tablespoon honey
0.5 cups flat-leaf parsley , chopped
0.5 cups cilantro , chopped
salt
2 eggs
pie
1 package phyllo sheet
2 tablespoons butter, melted
icing sugar , for serving
mint, for serving
1 st yolk
Roast the chopped almonds in a frying pan with a little oil. Season with cinnamon and honey. Heat a pan and fry the diced chicken meat. Add the chopped onion and fry until the onion is soft and glossy. Add the saffron , cinnamon, chopped parsley, chopped cilantro and salt and pepper. Let the chicken fry under a lid on low heat until it is cooked through .
Whisk the two eggs and add them to the pot. Mix around and take the pot off the heat. Let the chicken cool.
Keep the thawed filodegsarken in a damp towel while you make the pies , otherwise they dry quickly and become brittle . Make sure to have a bit of melted butter, two beaten egg yolks and a brush handy.
Take a filo sheet and brush with melted butter. Place another sheet on top and brush with butter again . Place the chicken mix and almonds in the middle of the sheets . Brush the edges with egg yolk and fold the filo pastry over the filling , the yolk will act as glue to prevent the seam open. Place the pie on a baking sheet with parchment paper , try to get seam-side down . Brush pie with egg yolk and bake in oven at 200 degrees for about 10-15 minutes until they are golden. Sprinkle pie with icing sugar before serving and serve gladly a sprig of mint to .
