Moroccan Orange and olive salad


This is a common salad in Morocco. The combination may seem strange works great. Strong, sweet and salty at the same time. Yum :)
Moroccan Orange and Olive Salad
2 oranges
2 tablespoons orange-olive oil
0.5 tsp cumin
0.5 tsp Harissa
1 teaspoon chopped parsley
10 chopped black olives
A few slices of thinly sliced leeks
Start by cutting away the peel and the white of the orange. Cut into slices. Mix oil and seasonings together. Mix oranges, olives and onions well. Then turn over the spices and stir gently. Let stand for an hour and then serve.
