Moroccan Vegetarian Tajine

Ask myself every time I make vegetarian food, why do I do it more often? It’s both nice against your wallet, animals and tasty. This one is a favorit here at home.
Moroccan vegetarian tajine
300 ml of chickpea
1 chopped yellow onion
3 cloves garlic pressed
1 eggplant into cubes
0.5 zucchini into cubes
2 chopped tomatoes
1 tbsp Raz el Hanout
0.5 tsp hot paprika
0.5 tsp ginger
1 pinch saffron
oil, salt
1 stock cube vegetarian
Fry the chickpeas until they are browned in oil. Take them up from the oil. Fry the onions until soft. Add the spices and let the few fry with a little while. Put the other vegetables and let it get gets completely cooked. Turn on a little water and add the broth and chickpeas. Let simmer a few moments. Served with rice

        I did promise a portion of the dish in return though … I always wanted to try it out but in our tiny kitchen every purchase of hardware throws us into utter chaos!

      Its quite special as it often have 30 different spices in it. πŸ™‚ But you find it in any middleeast/Northafrican shop. πŸ™‚

  6. I love your site and it is easy to navigate. Pick a picture and the recipe comes up. This looks so delicious. it will be one of items on the menu when my kids come. We love anything spicy.
