Avocado soup – creamy and cold, the perfect summer soup

Soup, I think is a very underrated dish. To serve a soup is actually always right. I can not think of any moment that it would not fit. A lovely good cold soup in the summer is lovely. This avocado soup is fantastisc smooth, soft and tasty. If you have guests, I promise you they will want the recipe. And then it is very simple to do.

Avocado soup
2 ripe avocados
1/2 lemon
200 m whipping cream
1 pinch of curry
1 pinch of pepper
200ml vegetable stock (dice + water)
Share the avocados in half and core them. Save a half to garnish with.
Squeeze over a little lemon juice so it does not darken as quickly. Scoop out the flesh from the other halves.
Mix the avocado flesh, the rest of the lemon juice and the remaining ingredients in a food processor or blender. Grind the whole thing.
Serve the soup hot or cold with avocado slices and shrimp as an accessory.

    WUNDERBAR ! My doctor told me only this-morning that my cholesterol levels need taking care of, and mentioned avocadoes.
    I wish this could be hot, as well, seeing that it’s winter here. 🙂

        Use hot, warm stock before you mixing it and it will still be hot after 🙂
