Sunday … I want a snack, and it’s empty all the cupboards and in the wallet. What to do?
Yesterday talked some of my friends they would bake rhubarb cake from one of my recipes. And this morning I found out that it had become great sucess at home with them. Nothing was left … Had actually forgotten this recipe and no rababer I had at home. What to do? I try to empty the freezer, as always this time of each month, and at the inside, I found a small package of black currants. So it had to be without rhubarb but with blackcurrant.
The World’s Easiest Blackcurrant cake
1 egg
100 ml of oil
100ml sugar
200 ml flour
1 tsp baking powder
200 ml blackcurrant
100 ml of hot water
1 tablespoon honey
Topping:
300 ml oatmeal
200ml sugar
100 ml of oil
Beat eggs and sugar until fluffy. Add remaining ingredients. Spread into a greased floured form, click the blackcurrant over cake.
Stir together topping. And sprinkle over cake. Bake 200C for 25-30 minutes.
Serve with custard or ice cream.
