Clayfish soup with poach yorks

Very good creamy soup that feels really luxurious and is still easy to do.
Crayfish soup with poach york
2 large sliced carrots
2 tablespoons butter
2 tbsp plain flour
1000 ml water
2 fish stock cubes
200ml creme fraiche
400 g of Crayfish
freshly ground black pepper
plenty of finely chopped dill
1 can of lobster tail without dilution
4 poncher yolks
Fry the carrots in butter for a few minutes. Stir the flour and then add water, bouillon cubes, sour cream and Crayfish.
Heat, stirring until all melted together into a hearty soup.
Season with black pepper and dill. Pour in the crayfish tails right before serving and let them warm up. Add in the poncherade yolk just before serving.
