2 whole eggs
2 egg yolks
250 g weak wheat flour
filling:
250 g ricotta
250 g fresh spinach
50g Parmesan cheese, grated
1 egg yolk
1 st nutmeg
salt
Black Pepper
Sauce:
100 ml olive oil
3 pieces small garlic cloves, grated
2 small dried chillies, whole
400 g of crushed tomatoes
1 pinch of sugar
shredded cheddar cheese
Oil
Make the pasta dough and let rest.
Blanch the spinach in boiling water. Pick up and squeeze out the water. Mix the ingredients for the filling. Roll the paste and click like ravioli filling. Seal off by brushing with egg yolk and press the edges carefully.
Cook the sauce for a while. Allow to cool.
Heat the oil. And lay down the ravioli. Let them get deep fry until browned. Pick up and allow the oil to be drained off. Sprinkle with cheese.
Dip the tomato sauce. Eat and enjoy!

1 st muskotnöt
salt
svartpeppar
Sås:
100 ml olivolja
3 st små vitlöksklyftor, rivna
2 st små torkade chili, hela
400 g krossade tomater
1 nypa socker
Riven cheddarost
Olja till frittering
Gör pastadegen och låt vila.
Förväll spenaten i kokande vatten. Ta upp och pressa ur vattnet. Blanda ingredienserna till fyllningen. Kavla pastan och klicka ut ravioli fyllningen. Förslut genom att pensla med äggula och tryck till kanterna noga.
Koka såsen en bra stund. Låt svalna.
Hetta upp oljan. Och lägg ner raviolin. Låt de får fritera tills den fått färg. Ta upp och låt oljan få rinna av. Strö över osten.
Doppa i tomatsåsen. Ät och njut!
