Banana tea loaf
This banan tea loaf is a big favourite here at home. Specially if you have some bananas going black. The more soft the bananas are, the less sugar you need. There is also no added fat in it.
The loaf get quite moist and don’t rise much in the oven.
I prefer to not mash the bananas to much. So when you take a bite you can get a pice of the fruit.
Banana tea loaf
2 bananas
125g sugar
2 large eggs
30ml milk
1 teaspoon vanilla
175g flour
2,5 teaspoon baking powder
2 teaspoon cinnamon
3 table spoon almond flour
Big pinch of salt
Mash the bananas. Whisk sugar, eggs, milk and vanilla. Mix the dry ingredients well together before adding to the wet mix. Whips it until it’s smooth.
Prepare a loaf tin with butter and breadcrumbs. Put the oven at 180c.
Pour the batter into the loaf tin. And put it in the oven for 60-70 minutes.
Enjoy with a cup of nice tea or coffee.
