Crema de Alicia – spanish soup, fat free

This soup is very famous here in Spain. One of my favourite soups.

Full of tast and smooth. Very healthy and lovely colour. Eat it both hot or cold. And best of all, you can do it fat free as well.

Crema de Alicia

400 grams of carrots, roughly chopped
400 grams of peeled courgette/zucchini chopped roughly chopped
1 small sized white onion, quartered
1 large red tomato, in quarters
450 ml of water or stock (you can use whichever stock you like)
    2 stock cubes
    salt to taste

a few drops of extra virgen spanish olive oil to splash on while serving if you like

Add all ingredients is a pan and let it boil until the carrots becomes soft.

Put it in a mixer. Mix it until everything became smooth.

You can choose to eat it hot or cold. If you like add a few drops of olive oil on the top before you serves it.
