Sicilian Lemon marmalade
Take 1 kg fresh Lemons and pick them several time each one of lemon with a fork trough the peel. Put the lemons in a pan and cover with water. Let stand for 4 days in a cool place and change water every day. On the big day, take away the water. Add 800 g sugar. Let it boil for 40 minutes. Let it cool down a bit and remove any stones you can see. Use a stick blender and blend it to smooth consistent. Put it in clean jars and close them. If it’s possible put them up side down. Let it cool.
