The best Taco chicken – get a juicy tasty chicken this way


Taco chicken is on the way

I like chicken a lot. There is so many different way you can cook them. What I don’t like is a tough dried chicken. Well don’t think anyone likes that.

What is your favourite part of the bird? My favourite is the tights. Specially if you can get them deboned.

As I have written before the way to get a whole roast chicken without getting a dry bird is this way. The way to make the best hole chicken

Just prepare the chicken in Taco brine

Whole Taco chicken

  • 1 chicken
  • 1000 ml boiling water
  • 60 g salt
  • 2 tablespoons lemon juice
  • 2 bags of Taco spice mix

RUBS:

  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1,5 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper

Put the salt and spices in the hot water. Let it cool off. Put the chicken in the brine. Put it in the fridge for at least 24h.

Take the chicken out of the brine. And wipe it try. Mix the rub and rub on the chicken

Put it in a roast pan with a rack or rotisserie. I do make it in my Air fryer I just love using it. No I don’t get payed to say that. 😜

In the oven 175c in about 1 hour. (Air fryer 160 c) Check with a thermometer that the breast is 75 degrees before you taking it out.

Serve with tortillas, salsa and salad.
