Lemon pancakes mess with walnuts, dates, coconut, yogurt


When I was a child I sincerely hated pancakes. Nothing could get me eating it. My mum tried ice cream, sugar well everything, but nop I refused to eat it. And now as an adult I like them. How strange it was. Never heard of anyone else who didn’t eat it as a child.

Anyway this days I do it quite often, perfect lunch food. 🤩👍

A delicious way of eating pancakes

Try this one. I’m sure you will love it.

Lemon pancakes

  • 2×200 ml milk
  • 3 eggs
  • 450 ml milk
  • 3 tablespoons lemon juice
  • 1/4 teaspoon baking powder

Filling:

  • 1 cup ruff chopped walnuts
  • 1/2 cup ruff chopped dates
  • 200 ml Greek natural yogurt
  • coconut
  • Honey

Start to add half of the milk with the pancakes ingredients. Mix the rest of the pancakes ingredients except the last milk. Add the last milk when the batter is without lumps, add the rest of the milk. Heat up a frying pan. Add little butter. Let it melt and turn little of the batter. And fry it on the both sides. To the same with the rest of the batter.

Cut the pancakes when they are ready into shreds. Put the shreds on 4 plates. Add the rest on top of the pancakes and finish of with the honey.
