Brie quesadilla with honey and pomegranate – healthy quick starter or lunch


Don’t you just love colours? Well I do!

This recipe you can have as a healthy starter before the main course or a for lunch to treat yourself. I think you always worth to treat yourself, specially at this time, in the after mark of Corona and lock downs.

Why don’t you treat yourself and your friends and family with a Brie quesadilla with honey, pomegranate and spinach.

Brie quesadilla with pomegranate and spinach

This recipe is per person

  • 2 – 4 small tortillas breads
  • 3 – 6 slices of Brie cheese enough to roughly cover the tortillas
  • 1 – 2 teaspoon honey
  • olive oil
  • A bunch of fresh spinach
  • 8 crushed walnuts
  • 2 – 3 tablespoons of pomegranate seeds

Take the tortillas bread and lightly oil one side of the tortilla bread. Lay the Brie on the non oiled side on the half of the tortillas. Sprinkle the honey over the cheese. Lay the non oiled side to the cheese.

Heat up the grill.

Meanwhile mix the spinach and walnuts roughly. And put it on the plate. Grill the tortillas until they got some nice colour.

When they got the nice brownish golden colour, remove from the grill. Cut each tortillas into four.

Plate the quesadillas beside the salad.

Sprinkle the pomegranate over the dish. And if you like some pomegranate molasses.
