Healthy Spanish Oxtail soup – slow cooking


We got a cold spells at the moment. So I curled up in the sofa with the dog, blanket and tv.

I got this fantastic soup recipe from my neighbour. And I just have to share the recipe with you! It’s so full of flavour! You just have to try it.

Spanish Oxtail soup

Oxtail soup

  • 1 kg oxtail (rabe de torro)
  • 2 chopped onions
  • 3 chopped celery
  • 2 chopped carrots
  • 1 can tomatoes
  • 100 ml Madeira or a dry sherry
  • 3 bouillon cubes
  • 3 bay leaves
  • 50 ml chopped parsley
  • Oil or butter to fry
  • Salt and pepper
  • 1000 ml water

Fry the oxtail into a nice brown colour.

Add the onions, celery and carrots and tomatoes. Let’s fry for 3 minutes.

Add the water, Madeira or sherry, bouillon cubes, the herbs and spices.

Let it boil for about 1,5 hours.

Take out the oxtail. And remove the meat from the bones. Cut the meat in very small pieces.

Reduce the stock for 5 minutes on high heat. Use a mixer or a blender to mix the vegetables to a smooth soup. Put the meat back and heat up the soup again so it’s hot and nice.

Serve this lovely soup with a glas of Madeira with it.

Enjoy 😋 I promise you will not feel cold after eaten this soup.
