This is a dish I just found. And it’s becoming a favourite here at home.
If you don’t want to serve it with rice, you just add more potatoes.
- 2 chicken fillets or 4-6 drumsticks 🍗
- 1 lemongrass
- 3 peel cubes potatoes
- 1 chopped pak choy
- 1000 ml water
- 1 bay leaf
- 0,5 teaspoon coriander leafs
- 5 tablespoons ketjap manis
- Salt and pepper
- 6 shallots
- 5 cloves of garlic
- 0,5 fresh ginger
Start by grinding the shallots, garlic and ginger.
Heat up the oil. Let the garlic paste fry for about 3 minutes with the lemongrass.
Add the chicken. Let it fry until it’s has a nice colour.
Add potatoes and the rest of the ingredients except pak choy in the pan. Let it simmer for about 30 minutes or until the potatoes is cooked. when it’s about 5 minutes left add the pay choy.
