This very tasty recipe I got from my friend , who is born on this fantastic island. And I will soon publish some more recipes from this amazing island.

Zanzibar chicken – Kuku wa kupaka
- 1 hole chicken cut into 8-10 pieces
- 1 chopped onion
- 3 medium peeled chopped tomatoes
- 3 crunch garlic cloves
- 1 crush chili
- 0,5 – 1 teaspoon chili pasta
- 0,5 teaspoon turmeric
- 1 tablespoon oil
- 1 big can coconut milk
- 1 lemon juice
- Salt
- Coriander for garnish
Mix turmeric, garlic, chili pasta, lemon juice and salt for 2 – 3 hours or over night.
Fry the onion until light colour. Add the tomatoes and let it cook for 1 minute. Add the coconut milk and chopped chili. Stir for all the time to get a thick gravy on low heat. Keep aside.
Fry the chicken pieces for 15 minutes so they get a nice colour.
Add the chicken with the coconut sauce. Pour the sauce over the chicken. Add the lid and let it simmer for about 20 minutes. Serve with coconut rice.
Serve with coconut rice.

Oh yummy! We will sometimes eat chicken three times a week (and we’re now starting to run out of ideas on how to prepare it differently each time) … but this is a great recipe – and I love that most of the ingredients you are using here, are already in our kitchen is 😉.

I rarely see chicken served with coconut. I’d order this delicacy.
