Wonderful flavours with the coconut, pineapple and the peanuts with the chicken.
Indonesian chicken and pineapple
- 4 chicken fillets cut into pieces
- 1 small tin of coconut cream
- 2 mild chilis cut into rings
- 1/4 of a pineapple cut into cubes
- 1 onion chopped
- 2 garlic
- Salt and pepper
- Coconut oil to fry in
Fry the onions soft. Add the garlic, chilli, salt and pepper. Let it get a nice colour. Add the coconut cream and let it simmer for about 10 minutes. When it’s almost done add the pineapple and let it get warm.
Serve with fried rice with unsalted roasted peanuts.
