There’s actually a joke here in the Philippines about the number of islands. Apparently, it increases or decreases depending on the tide 😂

We have a lot, actually — but the most common ones considered national dishes are adobo, sinigang, and kare-kare. 😁

No problem! 😋 Oh, I forgot to explain what they are so here goes:

        * Adobo: pork or chicken stewed in soy sauce, vinegar, bay leaves, and peppercorns; some versions drop the soy sauce
        * Sinigang: sour soup with either fish or pork and a lot of vegetables; Philippine lemon, tamarind, or guava is often used for the sour flavoring
        * Kare-kare: oxtail cooked in a peanut-based stew with vegetables and often served with shrimp paste; Indian sepoys who stayed behind in the Philippines after the British occupation of 1762 to 174 are believed to have conceptualized the dish, due to the lack of appropriate ingredients to recreate curries from the homeland

      1. We probably have a few:
“Bobotie” being the top one (a minced meat spiced with medium heat curry, turmeric, garlic, lemon zest, onions, herbs, salt and pepper and sometimes also raisins).
“Biltong & Droewors” is another favourite (cured meat that is a tasty snack).
“Potjiekos” will probably round of the top three … in one of our previous posts, I explained what it is (http://wetanddustyroads.com/2022/03/17/weekend-getaway-3/).
